James Beard Foundation Outstanding Baker Award nominee, Umber Ahmad, is the founder of Mah Ze Dahr Bakery. She probably is different from your typical wedding cake baker as she wants to modernize the wedding experience. Instead of one large cake, she will do a variety — maybe six or eight small nine-inch cakes. Sometimes she includes petite desserts, like choux (bite-size cream puffs), verrines with passion fruit, or chocolate mousse, for instance. And to get luxe, sometimes they garnish pastries with 22-karat edible gold! She also offers a unique dessert experience at weddings, such as a doughnut bar. Mah Ze Dahr is popular amongst New Yorkers for its brioche donut, which is pillowy soft, cheesecake, chocolate explosion cookie, and a variety of other pastries and baked goods.
